I did some great burgers today. I ground up 70/30 Black Angus chuck/eye of round and added in about 5% pork fat. Wow! They even tasted better than a lot of my gourmet burgers made with some combination of chuck, filet mignon, Delmonico, sirloin, or strip steak. Must have been the pork fat that gave them a different kick. And no, I don't buy the expensive steaks to make burgers with. I have a store that runs specials on whole filet for $8.77/lb. I cut them myself to the thickness that my wife and I like and save the scraps and trimming to grind. The other steaks I get as sale leftovers that the store is trying to get rid of cheap. Most of them will drop down to $3.99/lb..................
