Metallic during the Cliff years would be a good show. I never did make an Iron Maiden show and would have liked to have seen seen a show at or before Stranger in a Strange Land. Genesis in the round would be a great show. Ozzy on the Diary of a Mad Man tour with Randy Rhodes before he died would be a sight. A double bill of Triumph and Rush would be epic. Boston's Third Stage tour with Brad Delp in all his glory. +1 on the Hendrix/SRV show. I'd see Queensryche's Empire show again with them doing Mindcrime start to finish. That was a great concert the first time around. Deep Purple, Rainbow and Dio would be an interesting show to see. I could go on and on with this one.
