If you ever want to find out what real turkey tastes like, bag a wild one. The breasts are not as tender as domestic, but can be tenderized to make them less tough. I've actually had chicken breasts that were tougher.
Turkey's spend 95% of their lives on the ground. They can run 25+ MPH. Their legs are very tough, but still tasty. Best to make soup with them and by soup I mean simmer the snot out them, 1.5- 2 hours after you bring the pot to a boil; adding vegetables after the legs have been well simmered and the meat de-boned.
There's a reason why American Indians boiled a lot of the game they consumed as food.
